Happy Hour Wednesdays are back! We’re looking forward to kicking it off with a Sparkling Elderflower & Raspberry cocktail, perfect for a refreshing Summer drink. We also have Greek Cucumber Cups for an appetizer that will continue the refreshing menu! Enjoy!

Sparkling Elderflower & Raspberry Cocktail Recipe

Ingredients

  • 2/3 cup (165ml) elderflower cordial

  • 750ml bottle sparkling wine, chilled

  • Raspberries, to serve

Directions

  1. Pour 2 tablespoons elderflower cordial into each of 6 Champagne flutes. Top up with chilled sparkling wine, then serve each cocktail garnished with raspberries.

Greek Cucumber Cups Recipe

Ingredients

  • 2 cucumbers

  • 1/2 cup cherry tomatoes chopped

  • 1 cup chicken chopped, cooked

  • Olives

  • 1/3 cup feta cheese

  • Salt

  • Pepper

  • Cilantro chopped

  • Greek dressing

Directions

  1. In a bowl, mic cherry tomatoes, chopped chicken, olives, feta cheese, greek dressing, salt and pepper.

  2. Peel cucumbers partially, leaving think stripes of skin going down the entire length of the cucumber. Trim the ends of the cucumbers and cut each cucumber into 1 - 1½ inch thick slices. Scoop out the center of each slice with a melon baller or spoon, leaving a shell of flesh.

  3. Scoop about 1 tablespoon of the chicken mixture into the cucumber cups. Garnish with additional cilantro and feta, if desired. Enjoy!
